Greek Lamb Meatballs With Cauliflower Rice

Ingredients

  • 2 lb ground lamb/beef

  • 1 red onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp dried oregano

  • 2 Tbsp fresh mint, chopped

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/2 cup breadcrumbs

  • 1 egg

  • 1 Tbsp olive oil

  • salt

  • pepper

  • 1 head cauliflower

  • 1/2 cup chicken broth

  • 1 tsp lemon zest

  • 2 tbsp lemon juice

  • 1 Tbsp fresh dill, chopped (optional)

Make

  1. Mix meat, onion, garlic, oregano, mint, cumin, coriander, breadcrumbs, and some salt and pepper. Cover and let rest in refrigerator for 15 minutes
  2. Preheat oven to 400F
  3. Pulse cauliflower in processor until ground to rice size
  4. Roll meatballs into walnut sized balls
  5. Heat oil in 12 in. skillet over medium heat. Brown meatballs on all sides. Transfer to plate
  6. Leave 2 Tbsp fat, add cauliflower, broth, lemon zest and juice, and 1 tsp salt. Nestle meatballs on top and bake for 12-15 minutes
  7. Top with dill, any extra mint, and salt and pepper to taste
