Tzatziki

Ingredients

  • 1 cucumber, peeled, seeded, shredded

  • 1 cup whole-milk Greek yogurt

  • 2 Tbsp extra-virgin olive oil

  • 2 Tbsp minced dill and/or mint

  • 1 clove garlic, minced

  • salt

  • pepper

Make

  1. Toss cucumber with 1/2 tsp salt and let drain for 15 min to remove excess water
  2. Whisk yogurt, oil, mint/dill, and garlic, then stir in cucumber
  3. Cover and refrigerate until chilled, at least 1 hour. Season with salt and pepper to taste
