Falafel

Ingredients

  • 2 cups dried chickpeas

  • 1/2 tsp baking soda

  • 1 cup fresh parsley

  • 3/4 cup fresh cilantro

  • 1/2 cup fresh dill

  • 1 small onion, quartered

  • 7-8 garlic cloves

  • 1 Tbsp salt

  • 1 Tbsp black pepper

  • 1 Tbsp cumin

  • 1 Tbsp coriander

  • 1/2 tsp cayenne pepper

  • 1 tsp baking powder

  • canola, peanut, or other frying oil

Make

  1. One day in advance, soak dried chickpeas in water with baking soda for 18 hours or longer
  2. Rinse and drain chickpeas, then dry completely
  3. Blend/process chickpeas, herbs, onion, garlic, and spices into a coarse meal texture
  4. Refrigerate mixture for at least 1 hour to make shaping easier
  5. While heating oil on med-high heat to 375F, mix baking powder into falafel mixture
  6. Form falafel mixture into balls or 1/2-inch thick patties, and fry for 3-5 minutes or until crispy and browned
  7. Drain falafel in colander or paper towel-lined plate
  8. Serve hot

  • Canned or cooked chickpeas won’t work

  • Can freeze uncooked falafel patties. Falafel can be cooked from frozen

  • Can also coat in oil and bake at 350F for 15-20 min, turning halfway
