Country Style Greek Salad

Ingredients

  • 6 Tbsp EVOO

  • 1.5 Tbsp red wine vinegar

  • 2 tsp minced fresh oregano

  • 1 tsp lemon juice

  • 1 garlic clove, minced

  • salt

  • pepper

  • 3 cucumbers

  • 1/4 red onion, sliced very thin

  • 5 large ripe tomatoes

  • 1 cup jarred roasted red peppers, rinsed and chunked

  • 1/2 cup pitted kalamata olives, quartered

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 5 oz feta cheese, crumbled

Make

  1. Whisk oil, vinegar, oregano, lemon juice, garlic, 1/2 tsp salt, 1/8 tsp pepper in large bowl
  2. Peel cucumbers, then halve lengthwise, seed, and slice thin. Add cucumbers and sliced onion to to bowl and toss to coat, let marinate while preparing remaining ingredients
  3. Core, seed, and cut tomato into 1/2 inch thick wedges. Add tomatoes, peppers, olives, parsley, mint, and feta to bowl and toss to combine. Best served immediately
