Corn Salsa

Ingredients

  • 24 oz frozen white sweet corn

  • 1/2 cup red onion, finely chopped

  • 2 jalapeno peppers, stemmed, seeded, chopped

  • 1 roasted large Poblano pepper, chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 Tbsp fresh lemon juice

  • 1 Tbsp fresh lime juice

  • salt

Make

  1. Spray peppers with cooking spray and broil on high for 6 min, then flip and broil another 6 min
  2. Place peppers in covered bowl for 10 min to steam
  3. Spray fingers with cooking spray to protect, remove skin, stem, and seeds from peppers
  4. Combine all ingredients, add salt to taste (maybe 1/2 to 1 tsp)
