Chipotle Carnitas

Ingredients

  • whole pork shoulder

  • 2 tbsp vegetable oil

  • 1 onion, chopped

  • 2 cans Rotel tomatoes and chiles

  • 2 Tbsp garlic, minced

  • 1/2 tsp oregano

  • 1/4 tsp ground cloves

  • 2 tsp dried chipotle pepper

  • 1 tsp cumin

  • 1 cup beef broth

  • 1 tsp salt

  • 1 tsp pepper

  • 2 bay leaves

Make

  1. Heat oil in large pan and brown pork on all sides
  2. Add pork and all ingredients in slow cooker
  3. Cook on low 8-10 hours
  4. Remove pork and shred
  5. Remove bay leaves, drain half liquid
  6. Add shredded pork back to crock pot
