Vegetable Fajitas

Ingredients

  • 1 onion, sliced

  • 1 green bell pepper, sliced

  • 1/2 red bell pepper, sliced

  • 1/2 yellow bell pepper, sliced

  • 2 jalapenos, sliced

  • 3 cloves garlic, sliced thin

  • 12-16 oz mushrooms, sliced

  • taco seasoning

  • 2 15oz cans black beans, drained

  • flour tortillas

  • fresh cilantro

  • monterey jack cheese

  • salsa

  • sour cream

Make

  1. Saute onions, peppers, and garlic over medium heat until beginning to soften
  2. Add mushrooms and season with desired amount of taco seasoning. Cook until mushrooms are softened and remaining vegetables have reached desired level of tenderness
  3. Mix in black beans to heat through. Serve in tortillas with cilantro, cheese, salsa, and sour cream
