Mexican Street Corn Salad

Ingredients

  • 14 oz bag frozen corn

  • 1/2 Tbsp butter

  • 2 Tbsp mayonnaise

  • 1 oz cotija cheese

  • 1/4 jalapeno, seeded and finely diced

  • 1/4 cup cilantro, finely chopped

  • 1 clove garlic, minced

  • 1/4 tsp smoked paprika

  • 1/4 tsp chili powder

  • juice of 1 lime

  • salt

  • pepper

Make

  1. Melt butter over medium heat, add corn and cook for 10 min
  2. Mix remaining ingredients and then add cooked corn
  3. Serve warm or chilled
