Turkey Meatballs

Ingredients

  • 1 large egg

  • 2 cloves garlic, minced

  • 1 shallot, minced

  • handful fresh parsley, finely chopped

  • 1/4 tsp ground cumin

  • 1/8 tsp chili powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 lb ground turkey

  • 2 Tbsp olive oil

Make

  1. In mixing bowl, beat egg and add garlic, shallots, parsley, cumin, chili powder, salt, and pepper
  2. Add turkey and gently mix. Shape into 16 (~1 inch) meatballs
  3. Heat oil in large skillet over medium heat
  4. Add meatballs in a single layer and cook until golden brown (~2 min). Flip and repeat, until cooked through
  5. Serve with tzatziki!

NOTES |

  • Would also be good with ground lamb, or mixture of lamb and turkey

  • Freeze uncooked, shaped meatballs or cooked meatballs for up to 3 months

  • To prepare frozen, cooked meatballs, defrost and then gently reheat, covered, in a 350F oven until warmed through
