Pickled Red Onions

Ingredients

  • 1 red onion, halved and sliced thin

  • 1 cup red wine vinegar

  • 1/3 cup sugar

  • 2 jalapeno chiles, stemmed, seeded, and cut into thin rings

  • 1/4 tsp salt

Make

  1. Bring vinegar, sugar, jalapenos, and salt to simmer, cook until sugar dissolves
  2. Pour over onion, cover and let cool for 1 hour
  3. Drain in colander and serve or refrigerate for up to 1 week
