Black Beans On Toast

Ingredients

  • 4 oz cherry tomatoes, quartered

  • 4 tsp EVOO

  • salt

  • pepper

  • 15 oz can black beans, rinsed

  • 1/4 cup boiling water

  • 1/2 tsp grated lime zest

  • 1 Tbsp lime juice

  • 1 ripe avocado, sliced thin

  • 1/4 cup pickled red onions

  • 4 thick slices crusty bread

  • 1/4 cup fresh cilantro leaves

Make

  1. Combine tomatoes, 1 tsp oil, and pinch of salt and pepper
  2. Mash beans, boiling water, lime zest and juice, 1/2 tsp salt, pinch of pepper, and 1 Tbsp oil into a coarse puree
  3. Toast bread
  4. Spread beans on toast and top with avocado, pickled red onion, cilantro, and tomatoes
