Zucchini Bread

Ingredients

  • 1.75 cups unbleached AP flour

  • 1/2 Tbsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 3 large eggs

  • 1/2 cup vegetable oil

  • 1 cup turbinado sugar

  • 3 cups grated zucchini

  • 1 cup walnuts, coarsely chopped

Make

  1. Preheat oven to 350F
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon
  3. In separate bowl, mix together eggs, oil, sugar and beat until blended
  4. Add flour mixture and mix until well incorporated, then add zucchini and mix, and finally walnuts
  5. Pour batter into a greased 9x5 inch loaf pan, bake for 1 hour or until done
  6. Let bread cool, and preferably let sit overnight wrapped in plastic or foil to distribute moisture

  • Because of high moisture of the bread it seems to take an extra 10-15 minutes
