Winter Potage

Ingredients

  • 1 tsp olive oil

  • 1 tsp butter

  • 1 cup thinly sliced leek

  • 1/2 cup sliced celery

  • 2 garlic cloves, minced

  • 2 cups chopped broccoli

  • 2 cups baby spinach

  • 1 cup frozen shelled edamame

  • 1 cup frozen green peas

  • 1 Tbsp rice

  • 1/8 tsp ground red pepper

  • 3 cups less-sodium chicken broth

  • 1.5 cups water

  • 1.5 tsp lemon juice

  • 1/4 tsp salt

  • 1/4 tsp pepper

Make

  1. Heat oil and butter over medium-high heat. Add leek and celery and saute until tender
  2. Add garlic, cook until fragrant
  3. Add broccoli, spinach, edamame, peas, rice, red pepper, broth, and water
  4. Bring to boil and simmer, covered, for 20 minutes
  5. Blend to desired consistency, stir in lemon juice, salt, and pepper to taste
