Vegetarian Quesadillas

Ingredients

  • 1 Tbsp olive oil

  • 2 cups red bell pepper, diced

  • 2 cups canned black beans, rinsed and drained

  • 1 cup corn

  • 1 cup onion, diced

  • 4 cloves garlic, minced

  • 2 tsp cumin

  • 2 tsp chili powder

  • salt

  • pepper

  • 1/2 cup cilantro, chopped

  • 8 medium flour tortillas

  • 4 cups Monterey Jack or Mexican blend cheese

  • 3/4 cup sour cream

  • 1/4 cup cilantro, minced

  • juice of 1/2 lime

  • 1 tsp olive oil

Make

  1. Heat 1 Tbsp oil over medium-high heat, add bell peppers, beans, corn, onion, cumin, chili powder, and some salt and pepper
  2. Cook for 3-4 min until peppers and onions are softened. Remove from heat and stir in chopped cilantro
  3. Over medium heat, add flour tortilla to clean skillet. Top with cheese, veggie mixture, and another layer of cheese. Cook until golden on both sides (~3 min per side)
  4. Whisk together sour cream, minced cilantro, lime juice, and 1 tsp olive oil. Serve with quesadilla

NOTES |

  • Maybe try adding some extra lime juice to sour cream

  • Maybe try with red onion

  • Could also add avocado, tomatoes, mushrooms, etc

  • Needs a little more heat, maybe add jalapeno?
