Vegetarian Chili

Ingredients

  • 2 Tbsp olive oil

  • 1 medium red onion, chopped

  • 1 large red bell pepper, chopped

  • 2 medium carrots, chopped

  • 2 ribs celery, chopped

  • 1/2 tsp salt

  • 4 cloves garlic, minced

  • 2 Tbsp chili powder

  • 2 tsp ground cumin

  • 1.5 tsp smoked paprika

  • 1 tsp dried oregano

  • 28 oz can diced tomatoes, with juices

  • 2 15 oz cans black beans, rinsed and drained

  • 15 oz can pinto beans, rinsed and drained

  • 2 cups vegetable broth

  • 1 bay leaf

  • 2 Tbsp chopped fresh cilantro

  • 2 tsp red wine vinegar

  • cheddar cheese, shredded

  • sour cream

Make

  1. Heat olive oil in large pot over medium heat. Add onion, bell pepper, carrot, celery, and 1/4 tsp salt and cook until vegetables are tender (~8 min)
  2. Add garlic, chili powder, cumin, paprika, and oregano. Cook until fragrant (~1 min)
  3. Add diced tomatoes and their juices, black beans, pinto beans, broth, and bay leaf. Stir to combine and simmer for 30 minutes (stirring occasionally)
  4. Remove from heat and discard bay leaf. Blend 1.5 cups of mixture and return to pot
  5. Add cilantro and vinegar and remaining salt. Mix to combine. Serve with cheddar cheese and sour cream
