Vegetable Chowder

Ingredients

  • 2 lb potatoes, chunked

  • 1 onion, chopped

  • 1 small bag frozen corn

  • 2 carrots, diced

  • 2 celery stalks, chopped

  • 1 red bell pepper, chopped

  • 1 crown broccoli

  • 1 clove garlic, minced

  • 2 tbsp thyme, chopped

  • 1/8 tsp pepper

  • 2 tsp ground cumin

  • 3 tbsp dill, chopped

  • salt

Make

  1. Combine all veggies, garlic, thyme, pepper, cumin, and 6 cups of water to large pot
  2. Bring to boil, reduce heat to medium-low and simmer for 30 min or until veggies are tender
  3. Remove 1-2 cups of soup and puree in blender
  4. Add pureed back to pot along with dill. Season with salt
