Turkey Meatloaf

Ingredients

  • 1 large shallot, minced

  • 2 lbs ground turkey

  • 2/3 cup chopped cremini mushrooms

  • 3/4 cup Italian seasoned bread crumbs

  • 1/3 cup ketchup

  • 2 large eggs

  • 1.25 tsp salt

  • 1 tsp dried marjoram or oregano

  • 1 oz chopped fresh baby spinach

  • 2 Tbsp ketchup

  • 2 tsp brown sugar

  • 1.5 tsp dijon mustard

  • 2 tsp Worcestershire sauce

Make

  1. Preheat oven to 350F, coat 9x13 inch baking dish with oil spray
  2. Saute shallot in a bit of olive oil until golden
  3. Combine shallot, turkey, mushrooms, bread crumbs, 1/3 cup ketchup, eggs, salt, marjoram, and spinach until well blended
  4. Pat mixture firmly into a 10x12 inch rectange in baking dish
  5. Bake 45 min
  6. Combine 2 Tbsp ketchup, brown sugar, dijon mustard, and Worcestershire sauce
  7. Remove loaf from oven and brush sauce mixture over top, return to oven for 10-15 minutes
  8. Remove from oven and allow to rest for 10 min
