Three Cup Chicken

Ingredients

  • 1 Tbsp sesame oil

  • 2 Tbsp vegetable oil

  • 6 slices ginger

  • 5 cloves garlic, sliced

  • 1 dried red chili, halved

  • 1.5 lb boneless, skinless, chicken thighs

  • 1/4 cup warm water

  • 1/4 cup shaoxing wine

  • 2-5 tsp dark soy sauce

  • 1.5 Tbsp soy sauce

  • 2 tsp sugar

  • small bunch Thai basil leaves

  • 3 scallions, cut into 2-in. lengths

Make

  1. Heat sesame and vegetable oils over medium heat in a wok or saute pan and cook ginger, garlic, and red chili for a couple minutes
  2. Turn heat to high, brown chicken in single layer on both sides
  3. Add water, shaoxing wine, soy sauce, and sugar. Stir and cover. Turn heat to medium and simmer for 15 min to cook chicken through
  4. Slice chicken into bite-sized pieces, return to pan
  5. Turn heat to high, reduce sauce while stirring for a few minutes
  6. Add basil and scallions, fry for a minute until wilted

  • Also called San Bei Ji (Taiwanese/Chinese)

  • For regular soy sauce, use Lee Kum Kee brand not Kikkoman (which is a Japense soy sauce that is slightly different)

  • For dark soy sauce, use Lee Kum Kee brand. Mushroom flavored dark soy sauce can be a substitute
