Thai Shrimp Soup

Ingredients

  • 1 cup basmati rice

  • 2 tbsp unsalted butter

  • 1 lb medium shrimp

  • 2 cloves garlic

  • 1 onion, diced

  • 1 red bell pepper, diced

  • 1 tbsp freshly grated ginger

  • 2 tbsp red curry paste

  • 2 12-oz cans unsweetened coconut milk

  • 4 cups vegetable stock

  • 1 lime

  • 2 tbsp chopped fresh cilantro

Make

  1. Cook rice
  2. Melt butter in large pot over med high heat, add shrimp and salt and pepper to taste. Cook till pink (3 min)
  3. Remove shrimp. Add garlic, onion, red bell. Cook 3-4 min
  4. Add ginger, cook till fragrant
  5. Whisk in curry paste 1 min. Gradually add in coconut milk and vegetable stock
  6. Stir 1-2 min then bring to a boil and simmer 8-10 min to thicken slightly
  7. Add in rice, shrimp, lime juice, cilantro
