Teriyaki Stir Fry

Ingredients

  • 1 cup dry rice

  • 2 boneless skinless chicken breasts

  • 1/2 tsp garlic powder

  • pepper

  • 3 Tbsp cornstarch

  • 3 Tbsp olive oil

  • 1 medium onion

  • 4 cups broccoli florets

  • red bell pepper

  • 2 carrots

  • green beans

  • 1 cup chicken broth

  • 6 Tbsp mirin

  • 1/4 cup soy sauce

  • 2 tsp rice vinegar

  • 1/2 cup packed brown sugar

  • 2 Tbsp cornstarch

  • 1/4 tsp ground ginger

  • 1 tsp garlic powder

Make

  1. Cook rice
  2. Chop all veggies to bite sizes for even cooking
  3. Whisk together broth, mirin, soy sauce, rice vinegar, brown sugar, 2 Tbsp cornstarch, ginger, 1 tsp garlic powder
  4. Cut chicken into 1 inch pieces, sprinkle with 1/2 tsp garlic powder, black pepper, and 3 Tbsp cornstarch
  5. Heat 2 Tbsp olive oil over med-high heat, cook chicken pieces 3-4 minutes per side to brown and cook through
  6. Transfer cooked chicken to a plate
  7. Add remaining 1 Tbsp oil to hot pan, cook veggies to be tender-crisp
  8. Add chicken back in and add sauce mixture. Simmer until thickened (~1 min)
