Teriyaki Salmon Bowls

Ingredients

  • 1/3 cup mayonnaise

  • 3 Tbsp Sriracha

  • 3 Tbsp sweetened condensed milk

  • 1/2 cup soy sauce

  • 1/4 brown sugar

  • 1/4 cup mirin

  • 2 tsp grated ginger

  • 2 cloves garlic, minced

  • 1 Tbsp cornstarch

  • 2 lbs salmon

  • 4 cups cooked rice

  • 2 cucumbers thinly sliced

  • 2 avocados, sliced

  • 1 cup shelled edamame

  • 2 green onions, thinly sliced

  • 1 tsp toasted sesame seeds

Make

  1. Whisk mayonnaise, Sriracha, and condense milk with 2 Tbsp water in small bowl. Adjust consistency with more water
  2. Combine soy sauce, sugar, mirin, ginger, and garlic and simmer in small saucepan for 10 min
  3. Mix cornstarch and 1/4 cup cold water into a slurry and whisk into the soy sauce marinade to thicken
  4. Marinade salmon in soy sauce mixture for 30 minutes or up to overnight
  5. Preheat oven to 400F
  6. Bake salmon on parchment paper until just cooked (~8 min)
  7. Build bowls with rice, salmon, cucumber, avocado, edamame, onions, sesame seeds, and sauce
