Sweet Potato Casserole

Ingredients

  • 4 large sweet potatoes, chunked

  • 1 tbsp olive oil

  • 1/2 cup full-fat coconut milk

  • 1 tbsp vanilla extract

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 2 Tbsp pure maple syrup

  • pinch of allspice

  • 1/4 tsp salt

  • 1/4 cup all-purpose flour

  • 1/3 cup rolled oats

  • 1/3 cup packed brown sugar

  • 1/2 - 1 cup walnuts or pecans, chopped

  • 3 Tbsp melted butter

Make

  1. Boil sweet potatoes for 15-20 min until soft
  2. Preheat oven to 400F
  3. Drain potatoes and add 1 tbsp olive oil. Mash while adding coconut milk
  4. Add vanilla extract, cinnamon, nutmeg, maple syrup, allspice, salt and mix
  5. Combine flour, oats, brown sugar, nuts, and butter and mix
  6. Move sweet potatoes to baking dish, sprinkle topping over evenly. Finish with some extra cinnamon as desired
  7. Bake for 25 min and then let cool for 5-10 minutes before serving
