Spaghetti With Arugula And Prosciutto

Ingredients

  • 16 oz spaghetti

  • juice and zest of 1 lemon

  • 1 Tbsp butter

  • 1/2 cup Parmesan, freshly grated

  • 1/2 tsp crushed red pepper flakes

  • 3 oz prosciutto or cooked bacon

  • 4 cups arugula

  • salt

  • pepper

Make

  1. Cook pasta al dente in salted water. Reserve 1 cup pasta water. Return pasta to pot
  2. Add lemon juice and zest, butter, Parmesan, and 1/2 cup pasta water to pot and mix. Adding additional pasta water until creamy
  3. Add red pepper flakes, prosciutto, arugula, and toss until arugula begins to wilt
  4. Season with salt and pepper, garnish with extra Parmesan
