Southwestern Chicken Soup

Ingredients

  • 3 tbsp olive oil

  • 2 onions, chopped

  • 1 jalapeno chile, minced

  • salt and pepper

  • 3 tbsp tomato paste

  • 4 garlic cloves, minced

  • 1 tbsp minced fresh oregano

  • 1 tbsp ground cumin

  • 1.5 tsp chipotle chile powder

  • 8 cups chicken broth

  • 3 (12 oz) chicken breasts

  • 1 zucchini, sliced 1/4 in chunks

  • 2 tomatoes, cored and chopped

  • 2 avocados, cut into 1/2 pieces

  • 4 radishes, trimmed and sliced thin

  • 1/2 cup fresh cilantro leaves

  • 1 lime

Make

  1. Heat oil and cook onions, jalapeno, and salt until softened. (~5 min)
  2. Stir in tomato paste, garlic, oregano, cumin, and chile powder and cook untiil fragrant
  3. Stir in 1 cup broth, transfer to slow cooker
  4. Add remaining 7 cups broth, season chicken with salt and pepper and add to slow cooker
  5. Cover and cook 3 to 5 hours on low
  6. Shred chicken, skim excess fat
  7. Stir in zucchini, cover and cook on high for 30 min
  8. Stir back in chicken
  9. Top with tomatoes, avocado, radishes, cilantro, lime wedges
