Snickerdoodle Cookies

Ingredients

  • 1/2 cup unsalted butter (softened)

  • 3/4 cup sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 3/8 cup flour

  • 3/4 tsp cream of tartar

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/8 cup sugar

  • 3/4 Tbsp cinnamon

Make

  1. Preheat oven to 350F
  2. Cream butter and sugar for 4-5 min until light and fluffy. Add egg and vanilla, then cream for 1-2 minutes longer
  3. Stir in flour, cream of tartar, baking soda, and salt, just until combined
  4. In small bowl, mix remaining 1/8 cup sugar and cinnamon
  5. Wrap dough and refrigerate for 20-30 minutes (optional)
  6. Roll dough into smooth balls and coat well with cinnamon mixture
  7. Place balls on parchment paper-lined baking sheet and press down in the center of the ball with your thumb
  8. Bake for 9-11 minutes, until the edges just begin to turn a light golden color. Let cool on the baking sheet for a few minutes and then transfer to wire rack
