Skillet Chicken Parmesan

Ingredients

  • 3/4 cup panko breadcrumbs

  • 4 chicken breast cutlets or 2 breasts cut in lengthwise

  • 4 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1 tbsp sliced garlic

  • 2 cups tomato sauce, no salt added

  • 2 tsp sugar

  • 1 cup torn fresh basil

  • 3/4 cup shredded mozzarella

  • 1/4 cup freshly grated Parmesan

Make

  1. Position rack in middle, preheat broiler to high
  2. Cover cutlets in panko crumbs
  3. Heat 1.5 tbsp oil in large cast-iron skillet over med-high heat, add 2 cutlets and cook until crispy (3-4 min per side). Transfer to plate. Repeat with remaining 2 cutlets. Season with salt and pepper
  4. Add remaining 1 tbsp oil and garlic to pan. Cook until softened (1 min)
  5. Add tomato sauce, sugar, and bring to boil. Reduce heat and simmer, stirring occasionally for 5 min
  6. Nestle cutlets into sauce, top with 1/2 cup basil and cheeses. Transfer to oven
  7. Broil until cheese is bubbling, 2-3 min. Top with remaining basil after cooling for a couple of minutes
