Roasted Vegetables And Sausage

Ingredients

  • 1 lb red potatoes

  • 8 oz baby carrots

  • 1 tsp dried basil

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup olive oil

  • 8 oz asparagus

  • 1/2 large yellow onion

  • 1 red bell pepper

  • 1 package skinless smoked sausage

  • 1 Tbsp minced garlic

  • fresh parsley

Make

  1. Preheat oven to 400F
  2. Cube potatoes into 1 inch chunks. Toss potatoes and carrots with half of spices and olive oil
  3. Spread onto sheet pans and bake for 20 min
  4. Cut asparagus into 2 inch pieces, and slice onion, bell pepper, and sausage. Toss in remaining oil, spices, and minced garlic
  5. Add to sheet pans and bake for another 10-15 minutes
  6. Toss with fresh parsley
