Roasted Red Pepper, Hummus, Avocado, And Feta Sandwich

Ingredients

  • 4 slices whole wheat bread

  • 1/2 cup roasted red pepper hummus

  • 2 ripe avocadoes

  • 1/4 cup feta cheese

  • 2 tsp fresh lemon juice

  • 1 Tbsp chopped basil

  • 1/2 cup roasted red peppers

  • salt

  • pepper

Make

  1. Spread hummus on bread
  2. Combine feta and avocado, mash, add lemon juice, basil, salt and pepper to taste
  3. Spread avocado feta mixture on hummus, top with roasted red peppers
  4. Brush bread with olive oil or butter, place on a hot pan. Grill until toasted
