Roasted Broccoli With Feta

Ingredients

  • 1 large head broccoli, cut into large florets

  • 1/3 cup olive oil

  • salt

  • pepper

  • crushed red pepper flakes

  • 1 Tbsp red wine vinegar

  • 1/2 cup crumbled feta

Make

  1. Preheat oven to 425F with rack in middle
  2. Toss broccoli with oil and season with salt, pepper, and a pinch of red pepper flakes
  3. Heat cast-iron skillet over med-high heat, add broccoli, and cook without stirring until bottom begins to brown. Flip and repeat
  4. Transfer to oven and roast for 5 minutes or until desired level of browning
  5. Remove from oven and drizze with red wine vinegar and feta
