Quinoa Mediterranean Salad

Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1/2 small red onion, diced

  • 1 large cucumber, chopped

  • 1/2 cup chopped parsley

  • 1/2 cup chopped mint

  • 1/2 cup chopped pistachios

  • 15 oz can chickpeas, drained and rinsed

  • 1/2 cup feta, cubed

  • 2 lemons

  • 1/4 cup olive oil

  • salt

  • pepper

Make

  1. Rinse and drain quinoa, boil in water with pinch of salt and simmer for 15 minutes. Fluff and cool for 5-10 minutes
  2. Add diced red onion to bowl of water and soak for 10 minutes, then drain
  3. Juice lemons and combine in a small bowl with olive oil, salt, and pepper
  4. Toss all ingedients in dressing and serve. Season with additional salt, pepper, lemon to taste
