Pumpkin Pie Muffins

Ingredients

  • 1 cup all-purpose flour

  • 1 cup whole wheat flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground cloves

  • 1/8 tsp ground nutmeg

  • 3/4 cup packed brown sugar

  • 3 Tbsp unsulfured molasses or honey

  • 1/4 cup canola oil

  • 2 large eggs

  • 1 cup canned solid-pack pumpkin

  • 1 tsp vanilla extract

  • 3/4 cup lowfat buttermilk

Make

  1. Preheat oven to 400F
  2. Whisk flour, baking soda, salt, and spices in medium bowl
  3. In large bowl, whisk sugar, molasses, oil, eggs, pumpkin, and vanilla
  4. Stir in flour mixture in two batches, alternating with some of the buttermilk, until just combined
  5. Pour batter into greased muffin pans, filling each cup about 2/3 full and tap pan on counter to remove air bubbles
  6. Bake until toothpick comes out clean (~20 min)
  7. Cool on a wire rack
