Potato Leek Soup

Ingredients

  • 3 Tbsp butter

  • 2 large leeks, white and light green parts, chopped (5 cups)

  • 3 cloves garlic, smashed

  • 2 lbs Yukon Gold potatoes, roughly chopped 1/2 in

  • 7 cups low sodium vegetable broth

  • 2 bay leaves

  • 3 sprigs fresh thyme

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 1 cup heavy cream

  • chives

Make

  1. Melt butter, cook leeks and garlic over med heat 10 min
  2. Add potatoes, stock, bay leaves, thyme, salt, pepper, bring to boil. Simmer 15 min until potatoes are very soft
  3. Remove bay leaves and thyme sprig, puree
  4. Add heavy cream and bring to simmer until desired thickness (or add water/broth to thin)
