Pinto Beans

Ingredients

  • 2 cups dry pinto beans

  • 1 Tbsp oil

  • 1/2 white onion, chopped

  • 1.5 tsp cumin

  • 1/2 tsp oregano

  • 2 tsp salt

  • 1/2 tsp pepper

  • 1 Tbsp lime juice

  • chili powder

  • cilantro

Make

  1. Rinse and soak beans covered in 2 inches of water for 8-24 hours. Drain and rinse
  2. Heat oil over medium heat and saute onion until soft (~5 min)
  3. Stir in cumin and add beans, oregano, salt, and pepper. Cover with 2 inches of water and simmer gently, uncovered, until beans are tender. Add more liquid as needed to keep beans submerged
  4. Turn off heat and add lime juice, season to taste with salt, pepper, and chili powder. Garnish with cilantro

  • Can add a cup of chicken stock to water for simmering

  • Cook time varies with freshness of beans. Check at 1 hour and then every 15 minutes after
