Pasta Da Vinci

Ingredients

  • 1/2 lb penne pasta

  • 3 large shallots, chopped

  • 8 oz mushrooms, quartered

  • 2 tsp garlic, chopped

  • 1 lb chicken breast, cut into bite size pieces

  • 4 Tbsp butter

  • 1.5 Tbsp flour

  • 2 tsp salt

  • 2 cups Madeira wine (dark red not light)

  • 4 Tbsp heavy cream

  • 2 Tbsp parsley chopped

  • parmesan cheese

Make

  1. Cook pasta
  2. Add 1 Tbsp butter and saute shallots, mushrooms, garlic until tender. Remove and set aside
  3. Increase to medium high heat and add chicken, cook through. Don't overcook. Remove and set aside
  4. Reduce to med low and add 3 Tbsp butter. Once melted sprinkle flour and stir
  5. Add wine, heat to med high and reduce for 10 min
  6. Stir in heavy cream and bring to low boil, stirring frequently
  7. Add parsley, chicken, vegetables and simmer 3-4 min
  8. Serve with Parmesan cheese
