One Pot Salmon And Orzo

Ingredients

  • 2 Tbsp olive oil

  • 1/2 cup diced yellow onion

  • 4 garlic cloves, minced

  • 1.5 cups whole wheat orzo

  • 15 oz can basil, garlic & oregano diced tomatoes

  • 1 tsp Italian seasoning

  • 3.5 cups chicken broth

  • 1/2 cup shredded Parmesan

  • 1 lb salmon

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 Tbsp chopped parsley

Make

  1. Saute onions in oil in large skillet with a lid over medium heat until tanslucent. Add garlic and saute until fragrant
  2. Add whole wheat orzo, stir to coat, and saute for one minute. Stir in tomatoes, Italian seasoning, and chicken broth
  3. Bring to boil, then reduce heat and simmer for 8 minutes, stirring occasionally
  4. Stir in Parmesan cheese
  5. Season salmon with salt and pepper, nestle into orzo. Cover and simmer until salmon is cooked through and pasta is al dente (~8-10 minutes)
  6. Remove lid and simmer to reduce broth as desired, garnish with parsley
