Marry Me Chicken

Ingredients

  • 1/4 cup sundried tomatoes in oil, drained and chopped

  • 1.5 lbs chicken breast, halved lengthwise

  • 1 tsp salt

  • 1/4 tsp pepper

  • 1/4 cup AP flour

  • 1.5 Tbsp olive oil

  • 1 small shallot, minced

  • 2 cloves garlic, minced

  • 1 tsp tomato paste

  • 4 cups baby spinach

  • 2 oz cream cheese

  • 1 cup chicken broth

  • 3 Tbsp half-and-half

  • 1/4 tsp dried oregano

  • pinch red pepper flakes

  • 2 Tbsp grated Parmesan cheese

Make

  1. Pound chicken to even thickness, season with salt and pepper and dredge in flour
  2. Heat 1 Tbsp olive oil over medium-high heat. Cook chicken 4-5 min per side until chicken is cooked through
  3. Remove chicken and saute shallot and garlic in 1/2 Tbsp olive oil for 1-2 minutes
  4. Stir in tomato paste and cook 1-2 minutes
  5. Add chopped sundried tomatoes and baby spinach, cook until spinach wilts
  6. Reduce heat to low and add cream cheese, broth, half-and-half, oregano, and red pepper flakes. Stir to combine
  7. Return chicken to skillet and simmer in sauce for a few minutes, sprinkle with Parmesan
