Mandarin Pancakes

Ingredients

  • 1.5 cups all-purpose flour

  • 1/8 tsp salt

  • 2/3 cup boiling water

  • 1 tsp oil

Make

  1. Mix flour in salt in heatproof bowl. Pour boiling water and mix until ball forms
  2. Knead dough for 8 minutes until smooth, adding flour if too sticky. Cover and rest for 1 hour
  3. Roll into a cylinder and cut into 12 equal pieces. Roll into a ball then flatten into a disk of ~2-inch diameter
  4. Brush tops and sides of 6 with oil, place remaining 6 on top to make 6 double-stacked disks with oil in between
  5. Roll into 7-inch circles, using small amount of flour to keep from sticking. Flip frequently for even rolling
  6. Heat skillet over medium heat, cook pancakes one at at time, about 30-45 seconds per side. Let cool 30 seconds and then pull the two pancakes apart
  7. Cover cooked pancakes with a warm kitchen towel
