Lemon Chicken Orzo Soup

Ingredients

  • 4 tsp olive oil

  • 1/2 lb skinless, boneless chicken breast, cut into small pieces

  • 1 onion, diced

  • 2 stalks celery, diced

  • 2 carrots, diced

  • 1/2 tsp dried thyme

  • 6 cups low-sodium chicken broth

  • 1 cup orzo

  • 2 large eggs

  • 3 Tbsp lemon juice

  • salt

  • black pepper

Make

  1. Heat 2 tsp oil in a soup pot over medium-high heat. Season chicken with salt and add to pot until just cooked through (~5 min). Transfer chicken to dish and set aside
  2. Add remaining 2 tsp oil, onion, celery, carrot, and thyme and cook over med-high het until tender (~5 min)
  3. Add 5 cups broth and bring to a boil
  4. Add orzo and simmer until tender (~8 min). Turn the heat down to low to maintain heat without boiling
  5. Warm 1 cup broth in small saucepan until hot but not boiling. In medium bowl, whisk eggs while gradually adding lemon juice
  6. Gradually whisk in the hot broth to the egg-lemon mixture
  7. Add mixture to soup, stirring well until soup thickens
  8. Add cooked chicken and season with salt and pepper
