Korean Beef Bowl

Ingredients

  • carrots, shredded

  • cucumbers, sliced

  • seasoned rice vinegar

  • 1/4 brown sugar

  • 1/4 cup reduced sodium soy sauce

  • 2 tsp sesame oil

  • 1/2 tsp crushed red pepper flakes

  • 1/4 tsp ground ginger

  • 1 Tbsp vegetable oil

  • 3 cloves garlic, minced

  • 1 lb ground beef

  • 2 green onions, thinly sliced

  • 1/2 tsp sesame seeds

Make

  1. Marinate carrots and cucumber in rice vinegar
  2. Whisk brown sugar, soy sauce, sesame oil, pepper flakes, and ginger
  3. Heat vegetable oil over medium-high heat and cook garlic until fragrant
  4. Add beef and cook until browned (3-5 min). Drain excess fat
  5. Stir in soy sauce mixture and green onions and simmer until heated through
