Halibut With Coconut Curry Broth

Ingredients

  • 2 tsp canola oil

  • 2 large shallots, finely chopped

  • 2 tsp red curry paste

  • 2 cups low-sodium chicken broth

  • 1/2 cup unsweetened light coconut milk

  • 3/4 tsp salt

  • 4 5-oz halibut fillets

  • 5 oz baby spinach leaves

  • 2 cups cooked brown rice

  • 1/2 cup fresh cilantro, coarsely chopped

  • 2 scallions, thinly sliced

  • 2 Tbsp fresh lime juice

  • black pepper

Make

  1. Heat oil over medium heat. Add shallots and cook until beginning to brown (~4 min). Add curry paste and cook until fragrant
  2. Add broth, coconut milk, and 1/2 tsp salt and simmer until reduced to 2 cups (~5 min)
  3. Season halibut with 1/4 tsp salt, add to pan and coat with sauce. Cover and cook until fish flakes easily (~7 min)
  4. Microwave spinach in bowl with tight lid for 2 min
  5. Add rice and spinach to bowl, top with fish
  6. Add cilantro, scallions, lime juice, and some pepper to the sauce to season, then ladle over the fish
