Grilled Greek Style Chicken Kebabs

Ingredients

  • salt and pepper

  • 2 lbs boneless, skinless, chicken breast, cut to 1 in pieces

  • 1/2 cup olive oil

  • 3 tbsp fresh parsley, minced

  • 2 tbsp fresh mint, minced

  • 3 garlic cloves, minced

  • 1/2 tsp dried oregano

  • 1 1/2 tsp grated lemon zest

  • 1/3 cup juice (2 lemons)

  • 2 green bell peppers, cut to 1.5 in pieces

  • 1 large red onion, cut to 1.5 in pieces

Make

  1. Dissolve 1/4 cup salt in 4 cups water, submerge chicken and cover and refrigerate for 30 min
  2. Combine 7 tbsp oil, parsely, mint, garlic, oregano, lemon zest, lemon juice, and 1/2 tsp pepper into large bowl. Transfer 1/3 cup dressing to large bowl and stir in 1 tsp salt, set aside
  3. Remove chicken from brine, pat dry, and toss in remaining herb mixture. Thread chicken with onion and bell pepper onto skewers
  4. Grill
  5. Push off skewer into large bowl with dressing, toss to coat
