Greek Omelette

Ingredients

  • 5 large eggs

  • feta cheese, chopped

  • kalamata olives, chopped

  • spinach, chopped

  • cherry tomatoes, halved

  • salt

  • pepper

  • olive oil

Make

  1. Cook cherry tomatoes cut side down over medium heat in a drizzle of oil until softened and starting to brown, set aside
  2. Scramble eggs and add to pan until just beginning to set, season with salt and pepper
  3. Add cheese, olives, spinach, and tomatoes and fold
