Granola

Ingredients

  • 4 cups old-fashioned rolled oats

  • 1.5 cups raw nuts/seeds

  • 1 tsp fine-grain sea salt

  • 1/2 tsp ground cinnamon

  • 1/2 cup olive oil

  • 1/2 cup maple syrup or honey

  • 1 tsp vanilla extract

  • 2/3 cup dried fruit

Make

  1. Preheat oven to 350F and line large baking sheet with parchment paper
  2. Combine oats, nuts/seeds, salt, and cinnamon and stir to blend
  3. Add oil, syrup/honey, and vanilla. Mix until oats are coated
  4. Pour granola onto baking pan and spread into even layer
  5. Bake until lightly golden (~21-24 min), stirring halfway
  6. Let granola cool completely (~45 min)
  7. Top with dried fruit, store in airtight container at room temperature for 1-2 weeks
