Creamy Lentils

Ingredients

  • 2 Tbsp olive oil

  • 1/4 yellow onion, finely chopped

  • 1 celery stalk, finely chopped

  • 1 carrot, finely chopped

  • 1 garlic clove, minced

  • 1 cup green or brown lentils, rinsed

  • 1/3 cup dry white wine

  • 2 cups low-sodium chicken broth

  • 1 bay leaf

  • pinch dried thyme

  • salt

  • pepper

  • 3/4 cup heavy cream

Make

  1. Heat oil over medium heat and add onions, celery, carrots, and garlic. Cook until softened (~8 min)
  2. Add lentils and stir for 1 minute. Add wine, and simmer for about 30 seconds until mostly evaporated
  3. Add broth, bay leaf, thyme, and season with salt and pepper. Bring to a boil then reduce heat and simmer, covered, until lentils have absorbed most liquid and still have slight bite (~25 min)
  4. Stir in cream and simmer, uncovered, until lentils are tender and creamy (~5 min). Remove bay leaf and adjust seasonings
