Cheddar Cheese And Scallion Scones

Ingredients

  • 240g Unbleached AP flour

  • 1/2 tsp salt

  • 1 Tbsp baking powder

  • 6 Tbsp cold butter

  • 1 cup grated sharp cheddar cheese

  • 4 scallions

  • 2 large eggs

  • 1/3 cup milk or sour cream

  • 1 Tbsp Dijon mustard

  • 2 tsp hot sauce

Make

  1. Preheat oven to 375F and line baking sheet with parchment paper
  2. Whisk flour, salt, and baking powder. Work in chopped butter with fingers to make unevenly crumbly mixture
  3. Toss in cheese and scallions
  4. Mix together eggs, milk/sour cream, mustard, and hot sauce. Add to dry ingredients and stir until flour is just moistened (dough will be very sticky)
  5. Liberally flour counter and hands, pat dough into 10x2 inch rectangle and then cut into 10 triangles
  6. Place on baking sheet, leaving 1 inch between scones, and bake for 20-23 minutes until nicely browned
