Cauliflower Rice

Ingredients

  • 1 head cauliflower

  • 1 tbsp olive oil

  • 1 shallot, minced

  • 1/2 cup chicken broth

  • salt and pepper

  • 2 tbsp fresh parsely, minced

Make

  1. Pulse cauliflower until finely ground
  2. Heat oil in large pan over medium low heat, add shallot and cook until softened. (~ 3 min)
  3. Stir in cauliflower, broth, and 1.5 tsp salt
  4. Cover and cook, until cauliflower is tender. (~12 - 15 min)
  5. Uncover and cook until rice is almost dry. (~3 min)
  6. Stir in parsely and season with salt and pepper
