Carribean Coleslaw

Ingredients

  • 2 Tbsp Dijon mustard

  • 3 Tbsp brown sugar

  • 1 Tbsp honey

  • 1 jalapeno, minced

  • 2 Tbsp red wine vinegar

  • 1 tsp minced garlic

  • 2 Tbsp EVOO

  • black pepper

  • salt

  • 6 cups shredded Napa cabbage

  • 1 large ripe mango, peeled and sliced

  • 1 cup shredded carrots

  • 2 scallions, diced

  • 1/2 cup slivered almonds

Make

  1. Combine mustard, sugar, honey, jalapeno, vinegar, garlic, oil, black pepper, and salt in a jar and shake to emulsify
  2. Toss cabbage, carrots, mango, scallions, and almonds
  3. Add dressing just before serving
