Cannellini Beans

Ingredients

  • 1/3 cup EVOO

  • 1/2 yellow onion, chopped

  • 4 cloves garlic, peeled and smashed

  • 1 lb dried cannellini beans, rinsed

  • 1 cup chicken stock

  • herbs (bay leaf, thyme, parsley, rosemary)

  • salt

Make

  1. Soak beans for 8-24 hours with 2 inches water covering
  2. Heat olive oil over medium heat and cook onions and garlic for 5 minutes
  3. Add beans, herbs, the water they soaked in, and chicken stock. Add more water to cover beans by 3 inches
  4. Bring to a boil (skim off foam), and simmer gently for about 2 hours
  5. When desired tenderness is reached, discard herb stems and season with salt to taste
