Cajun Shrimp Quinoa Casserole

Ingredients

  • 1 lb shrimp, peeled, deveined

  • 4 med tomatoes, chunked

  • 1 jalapeno, chopped

  • 1/2 cup sweet onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp tomato paste

  • 3 tbsp olive oil

  • 2.5 tsp cajun seasoning

  • 2.5 cups cooked quinoa (~1 cup uncooked)

  • 1 cup shredded fontina cheese

  • fresh cilantro

Make

  1. Toss shrimp and 1 tsp cajun seasoning
  2. Toss tomatoes with 1 tbsp olive oil and 1 tsp cajun seasoning
  3. Heat 1 tbsp olive oil over med heat in cast iron skillet. Cook shrimp until opaque (2-3 min per side). Remove from pan
  4. Add remaining 1 tbsp oil, cook onion, jalapenos, garlic until tender (stirring often)
  5. Mix in quinoa, tomato paste, 1/2 tsp cajun seasoning, and tomato chunks. Top with shrimp and sprinkle with cheese
  6. Bake at 350F for 15 min
  7. Garnish with cilantro
