Buttered Peas With Lettuce

Ingredients

  • 1/2 cup low-sodium chicken broth

  • 1 large shallot, thinly sliced

  • 2 cups frozen peas

  • 1 large head of butter lettuce

  • 2 Tbsp unsalted butter

  • salt

  • pepper

Make

  1. In large skillet with lid, combine broth, shallots, 1/2 tsp salt, and pinch of pepper
  2. Cover and bring to boil, the reduce to medium and add the peas and top with lettuce
  3. Cover and simmer, occasionally stirring, until peas and lettuce are tender (~5 min)
  4. Stir in butter and season to taste
